Dani has been studying nutrition for over three decades. Outside of the classroom, she studied in the fields of an organic farm in rural Alabama; in restaurant kitchens; and in restaurant management.
Dani attended the Living Foods Institute, the Living Light Culinary Institute, The Chopra Center and Pacific Rim College in her pursuit of dietary insights. Dani has studied a variety of dietary approaches and continues to study with some of the finest experts of nutritional therapy and Eastern Medicine.
As a classically trained artist, Dani sees the human body with an architectural complexity, beauty, and perfection—viewing its capacity to sustain life and heal itself, with the same reverence as a fine masterpiece.
This brought her to the study of Eastern Medicine and Acupuncture at Middleway Acupuncture Institute. During her studies there, she continued to pursue her passion for holistic nutrition with a deep dive into Chinese Dietary Therapy.
Dani became a faculty member at Middleway Acpuncture Institute - teaching Food Therapy and Clinical Nutrients & Dietary Therapy in 2021. Dani is pleased to serve the greater Bellingham community in person and offers telehealth appointments as a holistic nutritionist to those outside of the area.

I was transfixed by the tremendous artistry and commitment to beauty required to complete the elaborate endeavor of these tapestries.
Crafted from silk, wool, silver and gilded threads, the cloth read like a luminous, textural painting.
The wool and silk threads were hand-dyed from hand-made pigments which were then hand-spun from hand-harvested fibers - literally engaging all of nature in the laborious processing.
The threads were then woven into such a painstakingly intricate design with a precision that felt inconceivable - reportedly taking an hour to weave just one square inch. I was brought to tears by the thought of how many hands, hearts, thoughts and countless hours went into the vision and creation of those tapestries.
